This recipe is something I found lying around in my pinterest recipe board for a while… I decided the original version was nice… but not spiced enough, I needed more flavor… so what better way to add a nice pop of flavor, than with queso! Something about the smooth bite of queso cheese just makes my mouth salivate! My family is a big fan of bold flavors, so it was time to reinvent this little beauty of a recipe for a cheesy cauliflower and broccoli bake. My recipe is aptly renamed… Queso Cheese Veggie Bake. I could see substituting the cauliflower for potatoes and this dish still being a big hit.

First, you are going to need 4 cups of both broccoli and cauliflower ( remove from the stem, cut into bite sized florets and boil in salted water until just tender ).

Next, while your cauliflower and broccoli are cooking… it’s best to start on your queso. You can do this one of two ways, you can either get the premade queso cheese dips and use probably about two nice sized jars of it, or you can make your own using velveeta and rotel. I did velveeta and rotel, dice up about two cups of velveeta into a sauce pan, add 1 cup of milk and then your rotel. Let this all cook on medium heat, watching it closely(don’t want burnt cheese on the bottom of your pan) and stirring it from time to time. In about 4-5 minutes, your cheese should be melted and your mixture should look like a great queso. Taste to see if it needs any salt, at this time I usually add about 1 tablespoon of salt and 2 pinches of red pepper flakes. Stir and then set aside on low heat, so that it doesn’t thicken back up.  At this point, your broccoli and cauliflower should be fork tender, strain from hot water and put into a lightly greased casserole dish. Pour your queso mixture right over it and then add 1 cup of shredded cheddar cheese and 1 cup of italian bread crumbs. Bake at 400 degrees for 35 minutes or until lightly browned on top.
